When it comes to home brewing operations you can get away with a large array of valves. Most brewers I?ve met tend to use some variation of a ball valve. A ball valve is what it reads, a valve controlled by a ball in the center. The ball is hollowed out, and rotates to prevent or allow flow via a lever on the outside of the valve. Full port valves have a more solid seal due to a smaller open area of the ball unlike the standard or regular ports. There are many different valve materials to choose from brass, bronze, steel, and PVC to name a few.
However it is pretty standard to use Stainless Steel for brewing due to its less corrosive properties. Non-Stainless Steel valves will certainly work but they will degrade faster over time and will not be as sanitary or strong. It is recommended to use stainless steel for any food or beverage operation due to its less corrosive properties which allow it to be cleaned more often creating more sanitary conditions and precise tastes. My favorite ball valve to use is a Stainless Steel Full Port 3 Piece valve,?

because it can be taken completely apart for inspection or cleaning. Unlike other ball valves this one is made to be user serviceable. You can see in the picture above that there are four bolts which hold the three pieces together. To clean or service this valve, just remove the four bolts and remove the rods that held them, and the bolt on top which secures the lever to the ball mechanism. These types of ball valves are very strong so I haven?t gotten any that were faulty yet. Any size you could need for your brewing operation is available. Many brewers use sizes ranging from 1/4? to 1?, but I?ve seen valves up to 4?. This ball valve is made up of 316 stainless steel and 304 stainless steel which have been tested to 1000 psi, far beyond my needs. A combination of metals mixed together makes this valve stronger and less corrosive than any of the individual metals stand alone.
